Do you really know what gluten is? Most know that gluten is in wheat and grains but what exactly is it!? Jimmy Kimmel shows us how uninformed some Americans really are with this humorous segment.

With up to 3 million Americans adjusting their diets, because they have celiacs disease, it is important for America to get informed. Gluten is the mixture of two proteins: Glutelin and Gliadin. For people with celiacs disease, these proteins mix into gluten and produce antibodies that attack and damage the lining of the small intestine. These proteins mix naturally in wheat, rye, barley, and cross-bred hybrids of these grains.

A Gluten Free Survival Guide

See a 30 Rock Actor Helping a Gluten-Free Kickstarter Project

Celiacs and those with gluten allergies love to help each other out, since it’s not an easy illness to go through alone. It is especially difficult to navigate eating at restaurants and helping others to understand the necessary precautions that need to be taken when dining out. This kickstarter project, which has 10 days left to raise funds, is an attempt to create a short film that will show how difficult it is to live with Celiac disease.

Watch the video previewing the project, “The Curse of Don Scarducci,” complete with an appearance from a 30 Rock actor:

The filmmaker hopes to create a film, told through the eyes of the world’s toughest mobster, about the issues created by living with Celiac Disease. The filmmaker was a former 30 Rock boom operator whose wife was diagnosed with Celiac Disease in 2006. Learn more about the Kickstarter project.

Understanding Food Labels: Organic, Non-GMO, Gluten-Free, and Natural

Imagine grocery shopping in a simpler time—strolling the market for your produce, meats, necessary ingredients, and treats before heading home to cook dinner with the family. If you’re going grocery shopping in 2014, it’s much more exciting. You may be purchasing gluten-free, sugar-free, fat-free, vegan,  or ‘natural’ products. With so many different diet categories, it’s important to know the difference in meanings between organic, non-GMO, gluten-free and natural. We’re here to help!

Organic typically means made without pesticides, herbicides, and other chemicals.

  • The USDA organic seal can be found on products made with 100% organic ingredients
  • Organic labels are also on products containing at least 95% certified organic ingredients with the USDA organic seal.
  • If you’re purchasing something that says, “made with organic ingredients,” it has been made with 70 percent organic ingredients. These products will not receive the USDA organic seal.

Non-GMO-projectNon-GMO (Genetically Modified)

As people continue avoiding foods that have been genetically modified, well-educated people have defended both sides of GMO food. While some worry tampering with DNA can create risky results, proponents for genetically engineered food feel the food is regulated for safety and helps the environment.

Due to testing limitations, “GMO free” and related terms are not defended legally or scientifically due to testing limitations.

Gluten SealGluten-Free

The FDA rules state that products claiming to be gluten-free must contain less than 20 parts per million (ppm) of gluten. If you wish to label your product “no gluten,” “free of gluten,” and “without gluten,” the same criteria must be met.

Natural 

Last but not least on today’s list of labels, “natural.” Surprisingly, the FDA has never defined “natural,” so it is freely used by any product—even heavily processed foods. We suggest using your best judgement and checking out the ingredients before putting a “natural” product in your cart!

Gluten-Free Holiday Baking Tips from a 3 Time ‘Cupcake Wars’ Winner

Screen shot 2013-12-09 at 1.59.45 PMThe holiday’s are a great time to gather  while sharing stories, laughs, and great food with our loved ones. In recent years, more people have been adapting to a gluten-free lifestyle, which can impact their choices of what makes their plate for the big meal!

The three-time winner of ‘Cupcake Wars,’ Kyra Bussanich wrote a new book, “Sweet Cravings: 50 Seductive Desserts for a Gluten-Free Lifestyle. Not only is Kyra a phenomenal cook, but she also was diagnosed with celiac disease and has adapted her latest cookbook to the gluten-free lifestyle.

You may not be a ‘Cupcake Wars’ winner, but with these tips from Kyra your gluten-free holiday baking can taste award-winning!

  •  If you’re following a recipe, don’t substitute the listed flour or starch with another type unless you’re familiar with its properties. There are many different types of gluten-free flours and starches, including millet, sorghum and sweet white rice flour, and potato and tapioca starches. Each has its own idiosyncrasies. For example, millet flour has a slightly nutty flavor and is well-suited for goods with a hearty texture. Sweet white rice flour holds moisture well and is good for recipes that have a slight gumminess to them. Potato starch is light and good for fluffy cakes.
  • Use eggs and butter at room temperature. Eggs are often used as a binder, the protein that substitutes for the missing gluten. Eggs and butter are both easier to work with when used at room temperature, and room-temperature egg whites whip up fluffier. If you forget to pull the butter out of the refrigerator beforehand, heat it for 7 to 12 seconds in the microwave. Put cold eggs in warm (not hot) water for 30 to 60 seconds.
  •  Don’t overwork batter and dough with xanthan gum in it. Corn-based xanthan gum is often used as a stabilizer and thickener in gluten-free baked goods, sauces, dressings and soups. Once this ingredient is added, overworking the dough can give it a slimy, gummy texture, and cause it to lose flavor (a good substitute for xanthan gum is ground psyllium seed husk).
  • Heat higher, cream longer for lighter cakes. One complaint people sometimes have about gluten-free baked goods is that they’re too dense. To prevent this, try setting the oven temperature 25 degrees warmer than you would for flour. This will cause the butter in the recipe to release its water as steam, which helps the cake rise quickly. Also, cream eggs and butter together longer—about 10 minutes—than you would for flour cakes.

Celiac Awareness Day is officially today. With so many people eating gluten-free for various reasons, it’s important to know that a disease exists where a gluten-free diet is the only cure: Celiac Disease. A few important stats to share with people who may suspect they have Celiac Disease:

  • 1 in 133 Americans has Celiac Disease
  • 83 percent of those who have Celiac Disease do not know that they have it—they are either not diagnosed, or misdiagnosed with something else!
  • It takes 6 to 10 years for the average Celiac to be diagnosed.
  • A gluten free diet is the only treatment for Celiacs.
